With so many fantastic alternatives to mashed potatoes, I really don’t understand why people even eat the potatoes in the first place. Whether it’s the mashed parsnips, the mashed sweet potatoes, or even the most popular alternative mashed cauliflower — you’re sure to find something that’s not only tasty but pretty darn good for you too. This recipe for Roasted Fennel Mashed Faux-tatoes from Health-Bent is a perfect example of what can be done to create a new class of healthy comfort food. After all, isn’t that the point? Food should make us feel good by promoting our health, not destroying it.
Excerpt from recipe author:
Besides the standard boiled eggs, we really tried to focus on actually making bits and pieces of meals; things we could throw together in a couple different combinations–as repetition is the enemy of my taste buds. With a little more finessing, hopefully this “cook up” will be something we’re able to organize and put together for the site every week.
