I grew up absolutely loving casseroles. I don’t really remember having them in my house, but I had them when visiting relatives or friends and while some people turned their noses up at them as simply a way to use leftovers, I savored every last bite. It’s another perfect example of a perfect comfort food.
However, knowing what I know now, I would never use the word perfect as the stuff that I was eating as a kid would hardly be considered food now. That’s why when I do see recipes like this from Carrie Vitt of Deliciously Organic, I get really happy. A chicken and “rice” casserole with pastured chicken and cauliflower rice — it doesn’t get much better than that.

Sometimes it’s nice to go back to the basics. Chicken and rice – we’ve all had it in some form or fashion. When I was a kid, it was white rice mixed with cream of mushroom soup and shredded chicken. It showed up at just about every pot luck and there’s just something warm and comforting about a basic casserole.
Cauliflower is the superstar of this dish. Pulsed in the food processor until it’s the size of rice, it brings the onion, bacon, mushrooms and chicken together to form a great comfort meal.
